【摘要】:Application,inparticular,tosamplesofintenselyflavouredproductsandtosamplesofveryconcentratedproducts.Theprincipleconsistsinmakingapreperationwhichallowsdirectassessmentoftheorganolepticpropertiesofasampleaccordingtotheanalysisrequired,asfollows:a)forassessmentofthepropertiesofthesampleitself:mixingthesamplewithachemicallydefinedsubstanceoradditiontoafoodmediumconsideredtobeneutral;b)forassesmentoftheeffectsofthesampleinafoodpreperation:addingthesampletothefoodpreparationforwhichitisintended.
